Over two centuries ago, the British Empire transported millions East Indians to various corners of the world. This was known as the Indian Diaspora. In the case of the West Indies, Indians were brought to the island of Trinidad and Tobago. Today Trinidad has a 40 percent East Indian population that has sustained and adapted to the Caribbean Landscape. These migrants brought with them the spice palettes from the Exotic Far East Land of India. Spices such as Cumin, Corrainder, Cardmom, Ginger, Masalas were fused in the tropical landscape of the Caribbean that lead to a unique cuisine that is known as Indo Caribbean. There are even dishes that you will not find in India Today.
As the society of Trinidad became more culturally diverse and integrated, influences such as Creole, Middle Eastern, Chinese and others fused together and led to a true "Melting Pot". This is why the tiny island of Trinidad and Tobago is known for some of the best food in the world.

The owner of Indo Caribbean Kitchen has been in San Diego since the 1990's and has always contemplated with the idea of introducing and sharing this cuisine with the Southern California collective.
